Yellow Moon Cheese Company

I dropped by Star Provisions yesterday to grab a sandwich (the prosciutto-and-butter sandwich with shaved parm is the closest thing in Atlanta to eating lunch like a Parisian, and sometimes I like to daydream …) and to see cheesemonger Tim Gaddis, who always has dreamy surprises of his own.

SP offers the best selection of cheeses in the area, and yesterday cheesemaker Corey Hinkel had dropped in, too, to bring Gaddis cheeses from Yellow Moon Cheese Company in Alexandria, Alabama, just a wee way from Anniston.

Hinkel is a former pastry chef who’s turned dairyman with longtime Wright Dairy owner David Wright. From 75 Holstein and Jersey cows, the dairy is creating some interesting artisanal local cheeses, from Red Hill Cheddar (a nicely sharp, slightly dry aged raw cheddar) to what they call Wanda — an asiago-style cheese that’s creamy, nutty and firm enough to slice but soft enough for sandwiches and broiling.

Gaddis plans to carry both, along with Yellow Moon’s truffled Wanda, which is rich, creamy and umami-laden from truffles and cheese flavor.
