Anthony Bourdain has never been shy about his opinions. Just read his book “Kitchen Confidential” or listen to him on his Travel Channel show “No Reservations.”
In the current print edition of TV Guide magazine, he also sounds off on various celebrity chefs, including Savannah’s own Paula Deen, whose buttery blood might boil if she read this:
“The worst, most dangerous person to America is clearly Paula Deen. She revels in unholy connections with evil corporations and she’s proud of the fact that her food is f–king bad for you [...] plus, her food sucks.”

Bourdain is a pretentious jerk who, by the way, does not cook either. His show is only watchable because of the disgusting crap he eats and the crazy people he encounters. What a hack.
If I could eat at Deen’s kitchen table very day, I would die a very happy man and maybe a little sooner than normal.

Spot on. Paula Dean’s food never looks good to me, although I know many like her over caloried muck
everyone knows Rachel Ray is not a cook, just a personality.

He’s looking for an out off his TV show. He got mad at Food Network several years back when he did a show on it. He left and Went to travel Channel and now Food Network owns a majority of Travel Channel. He may well end up on Bravo or some other low rent outlet before you know it.

I actually agree with his assessments of all of these food personalities. But he forgot to mention that he, himself, is a but a miserable human being with very little to offer his viewers save for a great itinerary. I actually enjoy No Reservations but the least of the reasons why is Bourdain. He’s the biggest kiss-ass of them all. Pretentious as hell and devoid of any gift of relaying insight into why the food at the wonderful places he visits is so remarkable.

DamtheButcher – you’ve obviously never been to Paula Deen’s restaurant. I am not saying that Bourdain is the authority – but Paula Deen is such a put-on. I honestly don’t want people to think that she in any way represents a true Southern lady ( or Southern cooking chef Kennesaw). We don’t say YYAAAWWWWWLLLL like that. She is such a prima donna, her staff can’t even speak to her in the restaurant. Poor tourists who visit her restaurant, if they don’t eat at Mrs. Wilkes, they’ll leave the city without ever having good southern cooking. If only she were the least bit sincere….

While Mr. Bourdain may have been a bit over the top, anyone who watches his show knows he’s not one to hold back. I will, however, agree with him regarding her food (at least what I experienced when I ate at Lady and Sons — overpriced and mediocre (targeting the tourists, perhaps?). I love good food and was thoroughly disappointed. Whenever anyone asks me about eating in Savannah I urge them to avoid it, but allow that I guess everyone should perhaps eat there once and decide for themselves. In my opinion, the food at Ms. Wilkes’ is a much better value.

Having eaten at both Brasserie Les Halles (Bourdain’s restaurant) and Lady & Sons (Deen’s restaurant), I can say that I’d much rather be sitting down to a meal cooked by Anthony Bourdain.
Slickwilly erroneously pointed out that Bourdain isn’t a cook. Technically he’s right, Bourdain is instead a professionally trained chef, and a really good one to boot. Paula, I assume, learned to cook by trying to see how many things she could inject butter into.
He makes a good point, and one I don’t think we should overlook. Deen’s food is insanely unhealthy, containing dangerously high amounts of fat, salt, and sugar. Moreover, she even markets some of these heart-attack inducing recipes to children. With the high obesity rates in this country, especially in the South, you kind of wish that a celebrity chef and the person most associated with “Southern cuisine” would try and advocate for preparing dishes that won’t kill you. Instead she parades around like butter is some kind of nectar from heaven. Don’t get me wrong, I love butter, but there’s no need to wrap bacon around it, deep fry it, slather it in mayo, and then deep fry it again.
Also, anyone who has actually had Southern cuisine can quickly tell that what Deen serves up is a poor imitation and not very good tasting to boot. I can easily name 100 chefs that do a better job of representing Southern cuisine than she does. Heck, you don’t even have to leave town, go visit Hugh Acheson’s joint Empire State South. That’s what real Southern food from a real chef should taste like.
Bourdain was right, Deen’s food is crap and she’s trying to kill us with it.

Paula Deen’s place is, like the Varsity, one of the most overrated tourist traps in Georgia. It may have been good when it started, but now it’s little better than a Cracker Barrel. The people who stand in line for it are the same people who think cruise ship food is good. Understandable, since many of them come from places where Red Lobster is the ultimate in fine dining.

I think the guy is hilarious. Obviously the majority of you guys have never worked in a kitchen, let alone a restaurant, so his humor or food jokes might not interest you. He is playing the role of a pissed off, ego-maniac chef who loves drinking and eating, which in most cases, is true with all chefs in the biz. Not to mention bourdain is a fantastic writer….have you watched the food network lately? dumb reality shows are taking over…i dont care who the next food network chef will be..because honestly they will get a show for about 2 weeks then get canned. AMEN, Anthony Bordain! I am from South Georgia, and Paula Deen makes us all look like a bunch of overweight idiots who eat crisco straight from the jar and think refrigerated pillsbury dough can be turned into a sophisticated culinary concoction. I applaud Ms. Deen’s business savvy, however, and I say more power to her….but if you think her cooking is anything more than an overcooked slab of heart attack on a plate, then you are sorely mistaken. Anthony Bordain is a very accomplished chef and writer and I think he’s fantastic. He is wrong, however. The most dangerous person to America, is the person and/or people who actually think Deen’s food is fit to eat….She is only profitting off of their stupidity….and I can’t blame her for that!

Paul’s food has always been more about fun than cuisine. I gave up most old style southern cooking years ago to get healthly; and most adults who watch her show do it for the enjoyment of a cooking style they remember from years past. Most – if they could, would love to eat what she displays weekly.
Bourdain is a liberal hack (every international show – his narration highlights the problems of the foreign country usually at the expense of the U.S.) on the tail end of his “career”, and has to continue to try and keep his name out there. Can’t disappear soon enough.

Actually, Bourdain was a chef for years. And, while pretentious, he is totally right. In a society wrought with obesity, diabetes and heart disease, culinary “experts” have a responsibility to present healthy options. Paula Dean adds a stick of butter to everything she cooks. Anything is good tasting with a stick of butter added to it. More difficult, is to make something both tasty and healthy.

Paula Deen and her overplay of the Southern accent is totally sickening. I was born and bred in the deep South and nobody speak as she does. The “yawl” thing, while used by many of us “natives” everyday down here, is phony and overused by Deen. That being said, some of her recipes are good and some are bad. Bourdain is nothing more than a NYC snob who probably detests anything Southern (unless of course you are black). He is just as phony as Deen. He uses his “eccentricity” as his calling card (as if he knows better than anyone else what is good or bad). No. he is just another smuck out there trying to make a buck by whatever means he can.

Seriously people, these comments dissing Anthony are crazy. He has never proclaimed himself one of the greatest chefs out there, though he has worked at some very well respected restaurants, such as Brasserie Les Halles. Secondly Paula Dean’s food is terrible for you. Yeah there is a line out the door but seriously anything with that much butter and fat in it is going to taste somewhat decent. I think what Bourdain is getting at here is that these chefs on TV really don’t have that much talent. Sure they can cook certain things, but its not like these people are winning Michelin Stars. Plus I haven’t read the whole TV Guide article, and I bet most people on this post haven’t either, so I won’t make a final decision on what he meant by these comments until I do. And just to state it, I have lived in GA my whole life and grew up on the kind of food that Paula cooks. I have also been to her restaurant and its pretty good, but not any better then what my Grandmother use to cook.

Bourdain is a classically trained chef with years in the trenches, a smart mouth and a taste for illegal substances. I spent a lot of years in food and beverage and pretty much everyone I know in the business is just like Tony. Even the nice ones you see on the television tend to have nasty tempers, swear like sailors and drink like… well, chefs. That’s what makes them so brilliant. Bourdain is the truth. Paula Deen is the TV Land version.
Another Savannah Native

5:52 pm
OK let’s start with this little-publicized fact – Paula is NOT from Savannah, she is from SW Georgia (Albany, I believe). Her food has very little in common with classic Savannah cooking. Paula is a nice person, she has worked hard, and has been the beneficiary of a very smart marketing and management team. Her restaurant is a tourist haven and an asset to the city…BUT locals rarely eat there, unless their out-of-town company insists. The food is below-average and resembles “pre-fab mobile home out-of-a-can” food more than “fresh-from-the-farm” Southern country cooking. It’s not as classy as true Savannah-style cooking, not as fresh or high-quality as true Southern country cooking. In summary, her food a bit like Paula herself…more of a caricature of a Southern lady than a portrait. Nothing wrong with her success or food, if that’s what people want…it’s just a shame that it perpetuates a bit of a “Dukes of Hazard” or “Beverly Hillbillies” image of Georgia and the South. But, as many locals have already said…for much better classic southern food, go to Mrs. Wilkes, go to Sweet Potatoes, or any number of other places.

PEOPLE, Paula Deen’s food is a good thing once a month or two. No one can eat that all the time, but it is ok once in awhile. Why people need to openly berate others is beyond me. I can’t understand why Anthony, or anybody for that matter be so mean. First of all, Paula Deen is a southern cook. She cooks the way my mother, grandmother, and aunts do. I have to say that I am very surprised at the two people who claimed Alton Brown is not a very nice person (I’m being generous here). I also live near him and have met him on many, many occasions and he has always been kind, gracious, polite, and accommodating. Long before I ever met him I emailed him numerous times with questions and he answered back promptly and shared a lot of personal information that certainly led me to believe that it was truly him responding. Although Paula has done alot for Savannah, and brought tons of tourism to our city, she makes us look so stupid sometimes. Yes, we do say y’all, but it’s not every other word that comes out of our mouths. And her “southern accent” is fake. The eggs were undercooked with runny whites but the server said that is the way the head chef said they were to be cooked – regardless of the customer’s request. He claimed that cooking eggs “medium” or “well” would take too much time and back up the orders!
In fairness, maybe it wasn’t the way Paula Deen planned it, but it’s not doing her image any good. Who’s watching the store – doesn’t seem to be Paula, and the dinner buffet is atrocious with what appear to be warmed up greens and vegies form institutional size cans, ugh! I do believe the homeless food kitchens do muchh better. Way to go Paula!

Among Paula Deen, Emeril Lagassee, Anthony Bourdain, and Alton Brown (3 of whom are Southern) whose descendents do you think will live the longest?
Will if be “Miss Smothered Butter”? or
Will It be “Mr. Pig Fat”? or
Will It be “Mr. Smarty-Pants Liberal Assh*le”" or
Will it be “Mr. ‘Skill and Knowledge’ will prevail”?

PD is a hack. I lived in Savannah when she was bringing bag lunches into our office and the food was bad then and is now. I lived on the “island” with her and we had to file suit to keep her from filming there because of the fat arses that drove out and blocked our streets (google it). Her sons are even worse, no talent playboy hacks who need to be exposed for what they are. She is bad for america and even worse for Georgia, especially us native of Savannah who love the city and coastal GA. Please Paula, kill over of a heart attack or stroke already.

This is why I love Bourdain. Deen may be a nice person etc but honestly, anything you drench in fat, salt and sugar has to be good. Just because she’s popular doesn’t mean she’s a good chef/cook: She’s a marketing machine and I avoid her and her products like the plague. Except to say in a loud, high pitched, southern drawl “Hey, y’all, I’m Paula Deen!” whenever I see her name on the shelf.
Bourdain’s show is interesting from both a food and travel perspective. Now that Travel Channel is owned by Food Network it will be interesting to see if he tones down his hatred for them. I sure hope not.

@BourdainFan… You hope he doesn’t tone down the hate? You speak volumes about yourself. The drunkard Bourdain is hardly the first to attack Paula Deen. How about we start a death clock and see which one dies first? Bourdain because of his alcohol and drug use or Paula for her love of all things butter. It’s a fool’s bet… but I’m guessing your stupid ass will take it.

Wow… I haven’t found a neutral opinion yet! You guys either love or hate Paula. The same with Anthony. I haven’t had the chance to try Paula’s food beside something a co-worker made from her book, and it was tasty! But I also have a friend who’s been to the resturant and says it was overrated. Anyway, I like her back story. Mother trying to do well by her boys and creating a destination resturant. As for Anthony… Hey everyone’s a critic. But with food, it’s like that old saying, “Beauty is in the eye of the holder,” Or in this case, “Flavor’s in the buds of the savorer!” LOL If you like it, it really doesn’t matter what a trained or untrained chef/cook says. If people are lining up for it…it can’t be too terrible. P.S. Did anyone see Barbara Walter’s tear into Dean about her children’s cook book on the, “View,” earlier in the year? TOO FUNNY! LMAO!

Tony is now a sell-out too… his show started with an “indie” feel and now it’s mainstream. I’ve lost respect for him AND Paula. Ina Garten’s food is not much better for you than Paula’s, but it’s more sophisticated. Lydia is the best cook on television by far, and she of course, is on PBS.

Or maybe he is one of the few people in America who sees the harm that Paula Dean and the like are doing to America. Her food based on butter and fat, and she doesn’t even try to make her food healthy for anyone. America is fat. People may not like hearing what he is saying because they don’t like to see the reality that they live in.

All of you claiming to be “Southern” or from “Savannah” need some help with your manners. We (real southerners) are not this nasty. And if we don’t like it we will still say something nice, and then find someting else to eat. And I don’t know why someone should get so upset over Fried Collare Greens. Why can’t there be enough room for all those chefs in the culinary world? Even though I guess Bourdain is the only real “chef” in the bunch. Not everybody always wants to eat the kind of haute cuisine that Anthony cooks. Sometimes we want fattening, butter-laden comfort food, or food that can be made quickly, or food that can be made more easily (semi-homemade), or diner or dive food. Sure, they’ve all cashed in and that has compromised their credibility in my mind but that does not mean that all their food is trash and unedible. And don’t blame Paula for the fattening of America: people were eating high fat food long before she came along and they can make other choices.

Seriously? Are you an adult?
I cook Paula’s recipes all the time. And guess what? Everyone in my family is healthy and is at a normal weight. Know why? Because– and I realize this may be a difficult concept for you to grasp– we eat in moderation and we exercise.
You see Paula as “harmful”. I see you as someone who believes people should not be allowed to make personal choices. And, for you, I am sad. Grow up.

All of the people hating Bordain and supporting chefs cooking out of cans and boxes are part of the problem with American food culture. America has a unhealthy relationship with food. We love convenience above our health. Convenience above cooking. We have lost the appreciation of food, the art of cooking, and just gorge ourselves on foods that aren’t even healthy enough for animals. Learn how to really cook from scratch. Just one meal a week. Maybe one meal a month. Just cook. Most Americans are overweight because of the Paula Dean & Sandra Dee food philosophy. As far as Paula, southern by pay only. Lived in the South my whole life, my family on both sides has lived in the south since the 1700’s. Paula isn’t a southern cook. She is a cook from the liberated south that feeds on McDonalds and is ashamed of its more rugged poor past. The only thing Southern about Paula’s cooking is well…her over exaggerated accent. We are lazy as a country, . Americans deserve to be unhealthy and fat.

after reading all of these comments it’s clear that nobody is watching Bourdain’s show for any sort of enlightenment. he travels the world and show’s the reality of how fat and dumb and lazy American’s are as a whole, as is proven by some of the idiotic comments in here. he and Zimmern look NOTHING alike though so many of you can’t seem to tell them apart, which clues me in to how much attention you’re paying to what you’re watching. his whole show is a look at the human condition from outside our confined ideal of how people should live, and shows how lucky we are as Americans. his opinion is spot on, although i do like Guy’s triple d show (mom and pop style joints are some of the best). in short, i wish more people were as cynical as Bourdain and myself, but there aren’t, just slobs with no real opinions.

WOW! So much anger! Few key points then I’m out of here:
1. Paula Deen’s cooking may be high calorie, but no one’s making you eat it. Be an informed eater or STFU. She’s nowhere near the worst, most dangerous person in America, but I can at least agree on the point made about her partnership with Smithfield Foods. Nasty company and I will not buy their products. This is why I said “be an informed eater” because there’s more to food than fat and calorie counts.
2. Bourdain’s snobby attitude was cool and now it’s just grating. He’s not helping, he’s simply sitting on the sidelines complaining. Pro tip- if you’re not part of the solution, you’re part of the problem.
3. Rachel Ray is on my top 10 list of people who I wish never became famous, and EVOO will send me into a rage, but maybe she’s inspiring people to try cooking something other than Hamburger Helper. I have no idea though, I stay away from everything she touches. *shudder*
4. Not sure what’s so wrong with Sandra Lee’s works on this planet. At least she’s doing something productive, even if she encourages a half-arsed way of cooking.
Finally, if you don’t like the South or the Stereotypes, then either help fix the problems or leave. I’m beyond done hearing a bunch of whiny Yankees and self-hating Southerners complain about our obesity, ignorance, etc. Help fix it, or GTFO. Spread a better message, or go up North.

I understand that Mr. Bourdain had classical training, and Ms. Deen (if the mythology is true) initially studied at the school of providing lunches for ordinary working people while rearing two sons absent a father.
My question to you all is, if the cuisine at Ms. Wilkes is the more authentic Southern cuisine, what makes it so. I look forward to responses. Thanks.

Anyone who wasn’t raised in the south never develops a taste for too much salt, bacon drippings, mayonnaise on everything, vegetables cooked beyond recognition, and all the other fats. Bourdain’s programs are very interesting to this viewer for the arm chair travel, but I am unlikely to try the recipes from those places. Watching Paula Dean is like watching a car wreck–you can’t stop watching, even if you want to look away. I can’t imagine two more disparate persons to be doing food shows on TV. I hate that moron with a passion but Paula Dean’s food and her restaurant is severely overrated. All I heard about was her world famous fried chicken. KFC, Popeye’s, and Bojangles all blows her’s away and I am not a fan of the 2 latter chicken places. My family and I all had the buffet. It was like $18.95 a piece for the darn thing. A dessert was included but it was some God awful chocolate contraption that tasted like what I think crap would taste like. My total bill was well over $100.00 for a family of 4. They automatically added 20% gratuity when all the waitress done was refilled our drinks.Paula Deen is a fraud and a hack.I know a few people from around Savannah and they all say she is held in very low regard by the locals.

I happen to agree 100% with him. I remember years ago when a lot of the other Chefs went on strike against Smithfield because of the way they treated workers, she stepped out and began a tour. I dont like the fact I have never seen her cook. The cooks at her restaurant the last time I walked by were almost all black. She has no personality other than that fake Southerness.
I like Bourdaine because he is willing to go where no one else will. Most importantly he has a respect for the people and culture of other countries. Yes he does drink a lot but he appears to have slowed up since he got married. I believe his best shows were the ones on middle east. Beruit, the tragic situation in Haiti and all of his African programs.

None of these folks are good cooks. They are all TV personalities who, if given a task to whip up a dish, probably would produce, at best, something completely average. Paula Deen’s food is probably what you’d find in a southern small town, tasteless and stodgy. Racheal Ray as someone else has said is just a TV fabrication. Bourdain himself is just happy criticizing others. His TV show started off well the first season but then once it became all about him, and his making unpleasant, sarcastic comments about other foods and cultures….deteriorated rapidly. I no longer watch it. As of this moment, you certainly wont find any outstanding chefs or cooks on TV. The Internet/you tube is a better place to find authentic and tasty recipes prepared by people who actually know how to cook!

Bourdain is and has been “off track and in left field” most of his adult life. After watching a couple of his shows a couple of years ago, I do something else now. He is sycophantic traveler; everywhere he goes in foreign countries he “disses” the USA as being “not as good” as the country he where he is “staging.” Sure Paula Deen is not the healthiest cook in the world but, neither are the people he “interviews” but, Paula is at least honest and not a “fence-sitter”; she cooks the way many of our grandparents and some parents cook and she never talks “politics” which is about all Bourdain does, or hints towards. He is a “fawning”, idiot awaiting a “spine donor.” Of course his earings are sort of cute…on him but, I would rather see them on women!!!

Paula Deen is a cook, not a CHEF (to be said with nose firmly tilted upwards, evidently). And she’s probably proud of it! As many have said, she cooks the way many mothers and grandmothers have for years and years.
It’s almost laughable when some of the folks here have claimed or inferred that she’s really not “Southern.” Obviously, due to the fact that Albany is NORTH of Savannah!
And if Bourdain wants to talk about health dangers, why doesn’t he start with the ever-present cigarette that always in his hand! …What a hypocrite!

Not all viewers are searching for fine French cuisine. The popularity of Paula Deen, Guy Fieri, and even Rachel Ray stem from the reality that not all of us live for the next trendy gallery opening or strange and expensive gourmet fad (remember the gold dusted burger). Most Southerners acknowledge that Paula Deen has commercialized her food, her act, and her empire; however, her on screen demeanor is consistent with many Southern women, including the accent, good cheer, and focus on therapeutic value of food. Guy Fieri is popular because he covers variations many folks want to see….casual food, offbeat interesting people, and a fun lifestyle. Give me cooks anytime over pretentious New York chefs. BTW, I also like that fact that down here in the ignorant South, we have our share of non-pretentious and highly competent chefs as well.

He’s telling the truth. The Food Network is nothing but a bunch of self-promoting hacks who can’t cook. Bobby Flay is about the last decent honest to goodness chef left on the network. The rest of their shows are amateurish cooks who have neither the skills or the originality of a true chef. I’m glad he’s calling them out for what they pass off as good food. I don’t dislike Paula but she is a sellout and her 15 minutes should be over.

Anthony is weird anyway. Paula is a down home cook whose food is delish (nod to Rachel). Why is it necessary to try to tear others down in order to make yourself feel superior. Thankfully both of these ladies are classy enough to ignore you. All food is not for everyone and if you don’t like what Paula or Rachel or even Sandra (who I’m not a big fan of)cook then turn to channel and don’t try the recipes.

I agree with AB. Paula Deen’s food is not good at all. I don’t know that many people in Savannah who would actually go to that crap hole that is called Lady and Sons. It is an over-rated buffet line. Yes, the lines are long to get in, mainly b/c of all the tourist who want to see Paula Deen, which isn’t happening. It might have been better back in the day when she was actually involved in it, but I doubt you see her there unless it is some publicity stunt. Her sons are really nice, friendly guys though! I get to play softball against them every year!

Bourdain is a depressed Yankee. He hates everybody but himself. If he would just look inward, he would see that his personality and knowledge of good food is so whacked. Lving in Brooklyn all his life has left him so void of knowing what is good food or even for that matter a good and happy life. If you notice on his show, it and he are such a downer I could never believe anyone would put this hack on the air. He has nothing to offer except to make you think you have a good life and a good personality, COMPARED TO HIS. I do not personaly know
Paula, Sandra or even Emeril. By the way he holds Emeril in the same esteem that he has for Paula. Why does he not realize he is the most miserable person on earth and he cannot stand anyone who is funnier, better at cooking, better personality, more well liked, has a better show, oh hell anything better than this depression ridden piece of crap. If anyone watches his show and likes it, You must just look at your own depression and think how well off you are. He is a mental case.

Bourdain will get the last laugh when Deen’s strokes out from eating WAY too much butter and crap from her own kitchen. Bourdain’s show is always thought provoking and shows the world and its people cooking and eating whatever is near their home. I can’t bear to watch Deen waddle around a kitchen rattling her jewelery – she is a living caricature of middle-aged southern women. She’s definately in my dead pool because she eats loads of chow that is of little nutritional value, and only exercises her fat arms by filling her gaping piehole and whipping up more butter and cream. Yuck.

Paula is an ambarrassment to the state of Georgia. As much exposure as she has had she has not learned anything. If she had to go through the qualifying that is now in place to become the Next
Food Channel Star she couldn’t get in the front door. I don’t know if eveyone is aware of it but all those dishes she prepares are created by the food channels chefs, once she gets past pork and beans with weiners she is done. I have eaten that slop she serves and it is terrible!!!!! When they had the celebrity chefs cook off from the thirteen states our esteemed Gov. Purdue picked Paula to represent us (what a joke) Paula’s dish looked like something a child would create. You could tell the other chef’s were embarrassed for her. I guess she made up for it by running around the other chef’s and acting like an idiot. She is nothing more or less than a hash house cook. (By the way I am from the South and I love Southern cooking . She prepares food as if she thinks people from the North think it should taste this way)

If you are really from South Ga.(I mean all of your life and your Mother all of her life and you are over 20), then you know a real “ya’ll” when you hear it. If you know Paula’s story, then you know that this public life is not a journey that she purposely started for herself. Her story is one of survival as a single Mother. People liked her food and the rest is history. If you don’t like her food or the way she cooks her food, then stay away and keep your opinions to your self. “Bless your hearts!”

To all the wonderful people and their comments. I have eaten at the Lady and Sons. I also have eaten at Bubba’s Place (Paula Deen’s brother’s restaurant). My daughter and I ate at both places and she said if she did not know better she would have thought that I had cooked it. I was taught at a very young age how to cook true southern cuisine. Yes Paula does pour it on a little thick with her accent. But that is the way alot of us do sound to yankees. Mr Bourdian may be a “Chef”. But I bet he could not hold a candle to a true southern cook. To all you people that think our true southern cusine will kill you NOT. Because a true southern cook will use fresh food from the garden and it will not be full of all the preservatives. I do alot of canning every year. When I cooked every night for my family we were not fat. I cooked with lard, crisco, fatback, Now we are all a little over weight (including yankees). Why because everyone eats out and you do not know what is in the food that you eat. I prefer to eat at home. Because I do not like other people touching my food. Everyone cooks different. That is what makes the world go round. But I would not allow Anthony Bourdain in my kitchen. Since he likes to eat weird stuff I have a pasture full of cow patties that he could try. All the food shows are just a gimmick to get people pulled in.You can take any recipe and make it as high fat or low fat as you want. Use your imagination.

I have to admit a couple of things. First, the Food Network has become so saturated with random cooking shows that I don’t watch it nearly as much as I used to. Their approach to food used to be from a pure creative stance. The only show right now that does that is Chopped, which is my favorite next to The Best Thing I Ever Ate. I watch the Food Channel more because they explore so many other aspects of food. It’s a fresh take, and I would say, it is what the Food Network was when it first started. On Food Network, it just seems to be more about the marketing and less about the food. Why would I pay $10 for Rachel Ray’s EVOO when I can go to the Mediterranean market and get enough authentic olive oil to last a year for $9 more.
Second, I happen to like Anthony Bourdain’s No Reservation. He had gone to regions of the world that I have never heard of and introduced me to foods that I never knew existed. He shows you the simplicity of food all over the world that we are completely missing out on here. There is nothing like eating lamb that has been simply seasoned with sea or kosher salt and grilled…and its healthier to boot. He has also done shows that show us the culture of other places and reveal humanity. I was moved to tears watching the show he did in Haiti a few months following the earthquakes. I learned about the food, I learned about the people and though I had no preconceived ideas, I saw the fighting spirit of the people that lived there. I appreciate what Paula has done for Georgia in general and Savannah specifically, but I have to say that over the years she has became more of caricature! I want her to be what she was when she started and I guess that is too much to ask. As for her food, $25 is a bit much for a buffet to me and I honestly have not heard very good reviews on the restaurants.
I am a native Georgian (Macon) and I know good southern food when I taste it. Paula is an exaggeration of how we cook. No, we do not use mounds of butter in our food, even before we became more conscious of our health. Before the introduction of smoked turkey products, my mother made greens that would make you slap yo momma without using any pork. The reality is, she caters to a segment of the population that love her just like Oprah, Phil, and Emeril! Anthony caters to a different segment! I think there is room for both!
By the way, I think it has already been stated, but AB does not eat grilled bugs and eyeballs. That distinction goes to Andrew Zimmern and I don’t like his show! Too over the top!

Despite your opinion of Mr Bourdain, he right about Paula Dean and the rest of the “Celebrity Chef” crowd. Sometimes it takes a person who’s a bit of a dick to have the nuts to tell the truth about things that everybody else likes. Likes SO much that they willingly blind themselves from the truth of it. I applaud him for not only opening his mouth and talking crap about some of the most annoying people on T.V, but also taking his own advise and not cooking anymore. Again, AB does not eat bugs, dung, rats, or anything of the sort on the show. He may have done so in the past at his own leisure, but who knows. I’ve been to Lady and Son’s and the best part about it was leaving. If all of you people who say you’re true “southern cooks” and that her food is as good or better than yours then you must be using the same canned ingredients from CISCO. Not to knock her, she knows how to make a dime, and is one of the few people in Savannah to actually own her building (which takes a boatload of money) so she’s doing something right. But please when making opinions, or throwing judgment around know the facts. AB has done really well for himself, overcome obstacles and is incredibly successful; as is Paula. I’m sure she could give a sh!t what AB says and vice versa. He happens to be opinionated and people like him for it or hate him for it.

As a natural medicine doc, a former chef and a believer that delicious food can actually be nutritious and healthful, I agree! While Paula is witty, kind and charming, her excessive butter, bacon grease and love of deep fat frying everything (including, to my horror, green beans) is irresponsible and dangerous. I believe that celebrity chef’s should be held to a higher standard . . . one that includes a view of food that promotes it’s fresh, health giving properties. Tony stirs the pot again. First off, he’s a CIA trained chef who did run the kitchen at Les Halles for many years. Second, he doesn’t go out seeking bugs and crap to eat. He is a big proponent of, “if you’re going to kill it, eat the whole animal.” movement. Paula Deen’s is excellent in front of the camera and crowds, but her cooking is BS (butter slathered). Guy Fieri’s restaurant is also mediocre at best. Check yelp.com for the stellar reviews. Rachel Ray as TB said admits she not a chef or a great cook. Like PD she good in front of the camera and is at least trying to be educational. Sandra Lee slaps crap together out of cans, but is the “Martha Stewart” of the Food Network and like Martha not to be f(&&*ed with. If the people who don’t see Tony’s show for what it is, a travel to far places and eat really f*&(&ing excellent food, don’t travel or understand cuisine and how it relates to and is shaped by local culture. Tony can be over the top, but he says sh8t that most of us with any culinary knowledge would like to say.

I for one get sick of hearing the “hi y’all” crap everytime she opens her mouth! Talk to her in the grocery store and her southern twang isn’t half of what she makes it out to be on TV.

OK…I had to weigh in on this one. The truth is I love Anthony Bourdain’s No Reservation. He’s soooo much more interesting…discussing food, life, politics, local customs, local celebs famous and infamous…all that stuff. Bourdain is smart. I love his edginess and salty personality… It’s what makes him interesting. As for Paula Dean…ah? I lost interest with her and her high fat recipes (too much budder and erl ya’ll). But she is what she is …a southern country cook…and thats OK. I admire her hardwork & rise out of poverty as a single parent with 2 sons. But, the food channel has become boring & insulting – nothing but damn stupid competitions and All American pigouts! …..what’s with the “cupcake wars” crap and that bulemic guy with the big gut! I switched to the Travel Channel. ANTHONY BOURDAIN IS THE KEITH RICHARDS of CHEFS!!! He rocks!!!

She is not Chef material she’s simply is your run-of-the-mill home cook with an annoying voice. I watched her *desecrate* a simple turkey stuffing by adding around 20 ingredients, way too many IMO, an absolute over-kill. When she pulled it from the oven it was watery and looked like upchuck. Infact, she tends to over-kill every dish she makes!
Hey, it’s only stuffing! 7 to 8 ingredients at most.

Yes, there is a lot of hype about cooks and cooking shows but Paula Deen created her empire from less than scratch as did Rachel as did Lydia etc. I give Paula credit for her guts in overcoming serious fears of of public appearance and she deserves the glory! Bourdain has now become the Sarah Palin of sour grapes who feels he will increase his limited popularity by taking pot shots at others. Really, are your ratings that bad? As Paula said, get a life moron!

Yeah, Tony is a snot. Brilliant, but a snot. However, his comments about Paula Deen’s connections with evil corporations is dead on. Smithfield treats its pigs and its employees equally horrendously, not to mention the massive pollution they generate. (Do some research, seriously. It will appall you.) While I get her appeal to the home cook, there is no excuse for her constant heart-attack-on-a-plate dishes. Can’t she cook something even remotely healthy once in a while? I like her personality, so I don’t hate her, and since I’ve never eaten in her restaurant, I can’t comment on her food. But her corporate connections and her fat-laden meals are, I think, perfectly fair game for criticism.
As to the other 3 – they are also encouraging the home cook and not attempting to be chefs, so of course Monseiur Bordain will not approve. However, I will say, I liked Rachael Ray before she blew up and became ubiquitous and annoying…there was a time in between her stiff beginnings and her manic happy-ness-on-crack stages where she was warm and likeable. Too bad she gives her dishes stupid names, they are pretty good and deserve better. I like Guy’s personality but not his cooking show, and absolutely loathe everything about Sandra Lee. She’s really pulled a snow job on the masses – yeah, she cooks with part prepared and part homemade foods, implying she’s reaching the regular joes – but how many of us regular joes have the entire decor of our kitchen change every time we cook? And I’m not talking about those damn tablescapes, either. Watch her show just twice – the curtains and everything in the background change color scheme for each show. (That’s why the whole thing is white – so she can keep changing the rest of the decor and it will look good.) I know her background and she didn’t come from much, but she sure is an elitist now that she’s had a wealthy husband and fame of her own – even though she tries to wrap it in a “I’m just like you” menu. Blech.

1st I love Paula and sons. She never claimed to be a chef she is a home cook with simple, modified recipes for easy meals. Ive tried some and they were great
They are not long and involved like Im used to cooking, but people dont spend time as much cooking like that. she fills a need for working moms and people who cant cook Just like Rachel and Sandra
who are great all in there own way I think Anthony is a donkeys behind I challenge him any day and lets see who can cook. If you want healthy cooking on Paulas show wait till Bobby orJamie is cooking with her.

I like Anthony he tells it like it and some people can’t take that, I also think Paula is entertaining, but as far as knowledge of food I think Anthony has it on the money, I like watching is show it gives us a lokk into how other cultures live and eat and he is also very funny, he also is a chef in his own right, and with credit to Paula just because you own a restaurant down not make you a chef, I agree that she has made something of herself by being a self made cook but there is big difference between a cook and a chef.

I would like to point out that of all the “Celebrity Chefs” on TV, Bourdain’s the one who did time in the trenches at Le Halle, working the line for 10 hour days, day after day, while managers screamed, waitstaff whined and turned out consistent solid food.
Any chef can cook a good meal. A good line-cook (Bourdain) can turn out good food time after time.

It was bad enough Paula talking so uneducated like—-all for oil, spatualer for spatula, & the God awful you’ll a million times—-now when she has her two sons on it is more you’ll’s (The Neeley’s should take heed also—-I counted on a show at least 15 you’lls in less than 5 minutes. They also need to keep the sex in the bedroom. Best of all Food Network should get smart & send them to English lessons. I am from the South & they are all overbearing with the phony crap!

Wow. I’m shocked at the idiocy on this comment board. Bourdain does not cook? Are you serious? Get your facts straight, homie. And no one who has actually had good southern food thinks Paula Dean’s is good; actual southern food has something more to it than just enormous amounts of butter. If you enjoy Paula Dean’s cooking, chances are you’re at least 20 lbs overweight and think Outback Steakhouse is where you should spend your anniversary. I betting you also think Obama was born in Kenya.
I used to somewhat enjoy Fieri’s “Diners, Drive-Ins, and Dives,” until he did one on the Magnolia Cafe, in Austin. For those of you who haven’t been to Austin, Magnolia is one of those places that has 50 menu items, two of which are worth trying (most notably, the loaded queso). And only when drunk at 3 AM. After watching Fieri oooh and ahhh over the “food” there, I pretty much stopped trusting his roadtrip recs as well.

Anthony Bourdain is a badass, and I would much prefer to have him representing the US abroad as opposed to Paula Dean, who waddles around with her screeching, grating, embarassingly exaggerated southern accent waxing on about the pork products she promotes. Smithfield, one of the corporations she is sponsored by, steadily drives incredible quantities of our natural resources to sh**. Greedy and irresponsible. Cheers to Bourdain, he makes quality TV.

It is sad to me that so many folks can’t express their opinion about the merits of Paula Deen’s food without making disparaging remarks about her and her customers. Truth to tell, I probably would not be impressed with her restaurant, but I probably will never know since it would be low on my list of places to try in Savannah. Still, a whole lot of folks get pleasure from her personality and enjoy her food. What’s wrong with that? Different strokes for different folks. There is a lack of civility here, perhaps due to the anonymous nature of online comments. But, hey, why should food comments be any different than the blog trash you get on political and sports issues/

I agree with Anthony Bourdain whole-heartedly. People who think Paula Deen’s food is fit for humans to eat must just feel more at-home eating from a trough, errrrr, I mean buffet. Plus every photo of the woman is airbrushed to high heaven – does anyone even know what the real Paula Deen looks like without the outdated big hair, impossibly perfect complexion, and teeth so white they must glow in the dark? Scary!

This is one of the funniest conversation threads I’ve ever seen! I lived in GA for many years and it STILL amazes me that there are some southerners who frequently and openly disdain the north as if the civil war happened last week (not to even mention the “liberal” political references). Hey guys, the NORTH isn’t thinking about you so stop acting like the crazy stalking ex-girlfriend who still talks about her ex to the few friends who’ll still listen even though he’s been married for years and he and his wifes 1st child is about to go to college….it’s just sad now.
Anthony Bourdain owns a french restaurant, CLASSICLY and ORIGINALLY known for it’s amazingly high caloric dishes and ample use of fats and butter so REALLY, DUDE? Paula Deen, Sandra Lee and the others appeal to a set of home cooks only 1 generation from Hungry Man Dinners and Spam and Cracker appetizers so how but we cut them some slack.
Sometimes you want fine dining with a cheese plate and wine pairings but sometimes you just want a Krispy Kreme cheese burger (though, I can’t really think of when that would be, lol). Whats lovely is there’s room for them all and that Americans are actually having a dialog about food when I thought we were doomed to strip mall takeout and packaged dinner. FUN STUFF!!

Oh come on people….. come on Anthony…. Paula Deen is a Character! You must use your own common sense in cooking. If she wants to have her cholesterol off the chart, then let her. But we all should be responsible for ourselves. When I cook her recipes I do not copy exactly as she does on her show and my cooking is great! And Anthony, Shame on you! Have you given up your 3 pack a day smoking habit?? If so …. BRAVO ! You have smoked for double the years that Paula has been a celebrity and I would not want to have your Lungs!!!!!! Paula you go girl. Slab that butter on and I’ll still interpret your recipes the way I want them to be.

Anthony, Oh Anthony. The things you said about other cooks may be true in the health sense but a bad PR move. When I first saw you on Television I did not like you. You only grew on me because of you’re honesty and my extreme love for food, With that said I’m not a large person. The point is choice, we chose to eat good or bad, but cooking is an art form based on what tastes good to the pallet, others are an art of healthy choices aligned with appealing flavor. I understand what it is like to have no filter when conversing, but with a little wisdom trial and error we learn to say things that we mean but with a more subtle approach. When pointing fingers try to remember you have been seen on television being a lush of sorts, is that not also unhealthy to you’re body, or a bad influence to america? Or how about the time you ate a marijuana pizza in another country? when you point fingers you have some pointing at you as well. I still will watch you’re channel occasionally but try to be nice to your’e camaraderie’s.

Paula Deen is a fat cow who — if she is lucky — will be slaughtered (as she has already been fattened) and Bourdain should — after cutting all the fat off that pathetic buttery carcass of hers — serve her up to homeless people who can then crap her out in the streets. . . where she should have stayed. FAT COW!!! LOVE YOU ANTHONY!!! KEEP HATING!!!

Wow, this is a funny blog spot. I enjoyed reading so many genius commentary. I’m not a fan of either teams. All Bourdain ever does is criticize everything, as if he’s so above and beyond it all. Has he taken a good look at himself lately? He’s a left-back, from the “still wanting to be cool daze” where he was probably never cool, that why he’s still trying so hard to be that. But the worse is, his show’s passe production of wanting to be “the hip rocker dude”, which always turns out to be a sorry excuse for creativity. If Bourdain would just stick to the food part, Asian food being the best ones – than maybe he’d be tolerable to watch – but most of the time he’s focused on finding and having the next drink – But at least he’s educated, and I couldn’t agree more with him on calling Deen out. She is the epitome of gluttony from every angle as far as I’m concerned. From what she eats, cooks, promotes, endorses (A ham corporation that has really bad dyes & additives in its product) where ever she can get her dirty gorged fingers on (and yes, I have also seen her lick her fingers and then touch food she was serving – it’s gross). But that’s what you get growing up as TPWT, never knowing any better, or the difference. I would never eat at any of her restaurants, or buy her books. One because I would never consider her a chef with all that lard loaded food she dishes out to you under the guise of a smile and chuckle; Two because I would never support a greedy money making machine monster mama, that doesn’t care one ioda about the health and welfare of her viewers and restaurant goers (the folk that support her). She’s happily poisoning the innocents and making money off all the ignorants; And thirdly, now she’s milking the people through her sons, constantly having them on her shows, plugging them, as well as probably trying to get them their own show – neither one of them qualified to be chefs either (their food sucks, very amateurish). What I’m confused about is…why is food network supporting this nepotism, or calling it the Paula Deen show then??? Food Network, is going down the tubes: Rachele Ray, “let’s just throw anything and everything into the pot” show; Sandra Lee, should just stick with her crazy tablescapes, so she could go back to just being on the informercial channels; Guy, God bless him – his food isn’t there, but he’s is a comedic genius. I watch the Food Channel more and more.
I KNOW EVIL COMPANYS
September 5th, 2011

I work for one of those evil companys she represents. Mr. Bourdain is right, she doesn’t care. I sent her a message on facebook about the wrong doing that was going on at this company, and she never responded, which proved to me she doesn’t give a damn about the ordinary hard working american people.
