New food trends for 2013?

Ahhh…the new year is almost upon us. When it comes to food that usually means that in a few days most of us will renew our work-out and diet vows to shed the layer of blubber we have built up over the last month of feasting.

And in the world of food writing, that means 2 things – round ups of “best of” lists of the year in food, and predictions of what is to come in 2013. Fortunately for us, in a two-birds-with-one-stone move, the Food Network mashed these two types of lists into 6 predictions of 2013 food trends that have already been going on for a few years.

Ok, I get that the Food Network isn’t exactly bleeding edge of the culinary industry, so they get a bit of a free pass, and I do think that parts of their predictions are safe bets. But some elicited a snobby eye-roll from me, like the “Asian Infusion” prediction. Unless it has been a trend so long that it is coming back with a retro sense of irony, Asian Fusion pre-dates food trucks.

I particularly enjoyed the prediction that spicy foods will be a big trend, as indicated by the masses embracing the Dorito’s Taco shell. And while the right dose of fish sauce can add some umami funk to a dish, I’m not sure that we will see it parked next to the ketchup and mustard on the condiment table across the country.

Can we end the molecular cooking trend? What is the point of pureed peas gelified into something the shape of….peas?

Curious comment given the fact that Dec 30 is indeed Bacon Day (You can look it up) I’m sure we all share the warm childhood memories of celebrating with friends and family.

Hopeful 2013 trend will be an overabundance of simple food prepared perfectly, well informed staff who will direct you towards those dishes that you will enjoy rather than what they need to sell to get a bonus, and most of all, a hearty handshake and thank you from the owner/manager thanking us for our patronage.

Happy New Year and always remember that when bacon is outlawed, only outlaws will have bacon.

No, modernist cuisine is advancing, especially with Modernist Cuisine at Home published (at a more reasonable price).

Perhaps “molecular” is out, but “modernist” is in, especially when you use something as natural as sodium citrate (sour salt, made from citrus) to make the best mac & cheese ever.

I THINK we will see more restaurants and chefs trying to entertain themselves with more silly gimmicks and gastronomical wizardry while I WISH for more of what @Ned Ludd said. Happy Bacon Day!

I hope to never see another foam on a savory dish. One of the worst meals I’ve ever had was at WD-50, and expensive, too. Had to stop at White Castle afterwards because we were so hungry (I wouldn’t recommend either place, but when you’re starving and broke from the previous meal, White Castle was the prevailing choice among friends). I hope to see a continuance of the fresh, local foods featured in creative ways. Multi-course offerings of small plates with wine pairings are a pleasant treat. And above all, respect for the food, not just an ego-boost for a celebrity-wannabe chef.

I wish they’d do away with chicken strips, fried macaroni and cheese balls and “signature” lettuce wedges in every restaurant you walk into. I’ve also seen enough chocolate molten lava cakes to last a lifetime.
