Top Chef Texas recap, Episode 17: Finally

What a long and mildly exciting road it has been.

Here we are, at the end of days for Top Chef Texas. For the final two we have good versus evil, if evil happened to look like Justin Beiber’s mean older sister. And we have Stone…Chef Tyler Stone.

For the “Quickfire” portion of the finale, Bravo brings back the battle of the B-team. Eliminated chefs return to duke it out in a Quickfire cook off and Paul and Sarah must pick their supporting cast according to which dishes they liked the best. But it isn’t merely the eliminated chefs in the bunch. Joining them are also master chefs and James Beard winners Barbara Lynch and Marco Canora, as well as a few of the pre-season rejects. Among them? Stone.

Arguably, the biggest mistake the producers made all season was letting that guy go so early.

Easily the best part of the sous chef selections were Sarah’s picks. Her first mistake? Scheming to discern Heathers dish so that she could get that ace in the hole on her team. After some debate, the light bulb goes off: That gross looking scallop on a mess of raisons is on Heather’s menu!

Here is how the teams shake out:

Paul: Barbara Lynch, Chris C., Ty-Lor, and Keith

Sarah: TYLER STOOOOOOOONE, Nyesha, Grayson, and Heather

The closest thing to drama that they could drum up on Paul’s team was his fear that having a master chef on his crew would cause problems,

which it obviously didn’t. A real master chef can play second fiddle without letting their ego get in the way.

Sarah’s team, however, had the golden goose that is Tyler Stone, and he was probably the biggest asset the team had. Why? Because he was Sarah’s Beverly. His presence allowed Sarah to focus all of her passive aggressive nitpicking and disdain onto one place, sparing the rest of her team from her wrath.

One second, Sarah talks about how she wants to take risks with her menu, and not just turn out the same old thing. And then, minutes later she is snapping at Stone saying that the finals wasn’t the time to try new [stuff].

While I’m sure the editors didn’t have to get too creative to make his montage of irritating questions and suggestions seem downright maddening, I can’t help but think they were a little harsh on the guy. Sarah asks him to chop celery, and he asks how small she wants it chopped. Seems like a fair question to me.

But all pitying aside, Tyler was pretty awful. That is what you get when you try to get Heather on your team. Awful.

ELIMINATION CHALLENGE

Each team puts together a restaurant – Sarah’s Monte Verde and Paul’s Qi – and goes head to head, Restaurant Wars style. The judges split into two groups, eating at one restaurant and then switching for the second service. The gallery includes all of the regular guest judges, some guy from Top Chef Canada (that exists?), and the shrewdest sponsor Top Chef has, Bill Terlato (CEO of Terlato Wine).

Seriously, the huevos on that guy? I can just imagine the negotiation where he says, “Oh, and by the way, I get to eat at the finale.”

Whether it was preening or not, I’m not sure, but the judges all seemed adamant that the food from both chefs was stellar. However, Tom’s claim that it was the best food they have ever seen in a finale just screams of a producer yelling, “The bloggers think this season sucks, so really play up how great everything was!”

Service went pretty well for both teams. Sarah came up with enough menial tasks to keep Tyler Stone occupied and chef Lynch comments on how “amazing” it is working for Paul, which is a high compliment coming from a chef of her caliber.

There are a few hiccups though. Sarah has a mild panic moment when her friend Rob discreetly warns her that he found a bone in his salmon, and she and Nyesha sprint to the kitchen to fondle the remaining fish before making the same mistake with the judges.

By far, the most dramatic point for me personally was when Keith almost blows it for Paul. In between servings, Paul has Keith heat up his first course, the custard-y chawanmushi topped with spot prawns, and the big guy overcooks them. But instead of freaking out on him – or as Keith would say, “Throwing him under the bus…HITTIN’ PEOPLE!” – Paul blames himself for not training Keith correctly on the dish.

Aside from his tendency to constantly doubt himself, Paul impressed me as a person throughout the season.

The editors did their job well, because after that, I was a bit of a nervous wreck worried that Paul might have just lost to Sarah.

JUDGE’S TABLE

The judges break down the competition by courses:

First Course: Sarah’s squid ink tagliatelle, spot prawns, and coconut Vs. Paul’s chawanmushi

Both of these dishes were winners with the judges, but Keith’s botched second batch left Tom wishing that the other judges had tasted the same chawanmushi they did. It was obvious that round one would have been a no-brainer for Paul. Bonus points for Paul for not blaming Keith for the screw up. Sarah takes this round.

Second Course: Sarah’s rye crusted salmon, pickled beets, whipped lardo, and fennel Vs. Paul’s grilled sea bass, clam dashi, pickled radishes, and mushrooms

Easy win for Paul. Sarah’s far-too-raw pickled beets turned everyone off.

Third Course: Sarah’s braised veal cheek with crispy sweetbreads and polenta Vs. Paul’s congee with uni, kale, and smoked albacore

This one was a draw. Sarah had some problems with overcooked sweetbreads, and only Hugh was completely blown away by the congee.

Fourth Course: Sarah’s hazelnut cake with candied kumquat and roasted white chocolate ganache Vs. Paul’s coconut ice cream, puffed rice, candied kumquats, and mangosteen

The judges are split again over dessert. Emeril and Hugh think Sarah nailed her dessert, and Tom and Gayle loved use of chili in Paul’s, with Gayle saying that it really “woke her up.”

So, who won? I’ll pretend for a second that even if you missed the show that you didn’t find out the second you Googled “Top Chef”….

PAUL!!!

We all breathe a sigh of relief. Sarah cries about how it should have been her. We all smile.

Another season of Top Chef in the bag. For you gluttons for Heather punishment out there, tune in next week for the reunion where we can all get reminded of how abrasively terrible she is.

Thanks for reading along this season guys. I can’t say that it was my favorite, but now that it is over it means we can start fresh next fall. I just hope that they let Tyler Stone try out again, because that guy is pure gold. Seriously.

Sarah showed her true colors to the end, bullying, sucking up, self-promoting, throwing her peers under the bus, and finally (gag)…faking tears. I am glad Sarah was on top Chef, so that we have been warned about her bony fish course…. Sarah should add Humble Pie or Karma Cakes to her dessert menu.

Hooray for Paul!! What a great guy and excellent chef! His consistently high performance throughout the season earned him the title of Top Chef. His embrace of his father and their shared tears was the most touching moment of the season for me. I hope to eat in Paul’s restaurant some day.

Poor Tyler – he might actually have brought something exciting (other than the vitriol that Heather and Sarah served) to the season. That said …

Tom’s suit in the finale was exciting enough. I couldn’t tear my eyes away. It reminded me of the swishy suit George Costanza wore in that Seinfeld episode where George bought a new suit for a job interview.

Maybe I missed it, but did we ever get a final tally on the dough Paul won overall? I’m THINKING he was around 50K pre-finale, so he made out like a bandit – and earned every penny of it IMO.

But all the money in the world couldn’t buy the satisfaction of Sarah’s crying lament of it-should-have-been-me! Karma, baby. Karma. We all cheered, and Beverly probably did cartwheels, when Paul was announced the winner.

I for one am glad that there were two great competitors in the finale and congrats to Paul but I really think Sarah should have won it. Paul played in his confort zone all season doing takes on Asian food every week but Sarah really stepped out and brought it. It’s easier to refine the smallest details if you do something every day. I’m sure they will both have amazing careers ahead of them.

This was great!!!! I really enjoyed and liked Paul, thought Nyesha was a great contender and did not like the crabby lady we will unfortunately see again at the Reunion show. Isn’t ironic though how some of the folks who did not win get more recognition. I still think that the Voltaggio brothers season and the season with Sam were my favorite by far……. I was a little disappointed in the lack of fanfare with Paul’s win. Would have been nice to see a little confetti!

This season was fairly painful to watch. Sarah’s behavior was embarrassing as well as maddening. Her fake gestures and mean spirit were pathetic. Very glad the final prize went to one of the nicest and obviously most talented people to grace the Top Chef slate to date. Yay Paul!!!

Karma is a bitch. The whole drama of Sarah scheming to get Heather on her team. I literally had a visceral reaction to the two interacting, their facial expression. Jesus. Glad Paul won and was not sure that was going to be the case until the end. Editors did a good job. I think it was a mistake have two services in the final. Should have limited it to the judges, and have a separate sponsors table, giving them whatever face time they crave. Looking forward to the reunion with all the awful drama.

Worst season of Top Chef so far, with that said, Paul is deserving of the win and no one should have won but him.

Thank God Paul won, or I may have never watched Top Chef again. Sarah was an evil witch from the beginning and she didn’t deserve to win, simply due to the way she treated Beverly. Yay Paul!!

One of, if not, the worst seasons of Top Chef ever…The Cheftestants were unimaginative and boring, and there wasn’t one meal in the finale that I would consider spending top dollar for…

I’m glad Paul won. I didn’t like the way any of the girls treated Beverly and I still don’t understand why. I thought Beverly was very talented chef. I would rather have seen her in the finals than Sarah. Sarah loves to wine and whine.

The “always cooks Asian” meme is so so ignorant. How come Sarah never gets knocked for always cooking European food. Sarah cooked again Italian and German food. She grew up with German food and works in an Italian restaurant. Paul cooks mostly Japanese and Filipino food. He grew with Filipino food and works in a Japanese-ish restaurant. That’s who they are. Ugh, the Asian food comments are so grating.

I am soooooooooooooo glad Paul won, Sarah was extremely evil from the start, startng with how she treated Keith. I would have loved to see Paul and Nyesha in the final, but anyway enjoy your humble pie Sarah and maybe next time you will not cry like a baby ” I should have won”, but you did not and I am extremely happy. She is a mean and wicked person. Karma is a Big B. Good job judges.

I think he had already won over $50,000 plus a new Prius and he took home the BIG Prize. Kudos!

I agree with every comment above regarding Paul’s well-deserved win as this season’s “Top Chef. He truly deserved to win. This young man played the game with talent, kindness and humility, words that obviously were not a part of Sarah’s make-up. It was hard for me to appreciate her talent because she spent too much time harassing other team members, whining, being underhanded and annoying. Congratulations to Paul!!!

um…how many times did Sarah make risotto…and pasta?? Sooooooo glad she got beat. Not the most entertaining season but I did like Paul and I’m so glad he won. I enjoyed Ed and Grayson as well–they always made me laugh. AND Thanks Jon–enjoyed your blog!!

SO happy that Paul won! He showed us what he is made of from the very start of the competition. His talent, his attitude and treatment of others stood out from the rest. To be honest, after Beverly won her spot in ‘Last Chance Kitchen’ I wanted her to come back and take it to the win! I would have LOVED to see her defeat Sarah and be one of the final two with Paul. Congratulations Paul – you deserve it! I’m looking forward to the Reunion show, primarily to see if Sarah and some of the others are now humble enough to admit their treatment of Beverly was despicable.

Overall, I enjoyed the season. There must always be a villain, and in this season we had at least two (three if you count Lindsey’s acquiescence to Sarah and Heather). Karma came back to bite Sarah, thankfully. I truly want to go to Austin and dine in the restaurant where Paul cooks. He proves that a talented person doesn’t have to be backstabbing and mean.

race has no place on this page. go away. not sure is there has ever been a oontestant as ugly acting as sarah. congrats to paul!!! he could have cooked 3 different dishes of soup and salad and still deserved to win over over sarah. she is the most non humble person in the world and i thnink she will still be the same next week. i thought she talked about her dad this season? where did the moment of truth ’single mom’ super daugher story come from?? i know i was not the only one who saw the look on nyeisha’s face when sarah called her name last night, lol. and where were bev and that other girl? their losses were too recent and too deep for them to come back as sous’? hmmmmm. jon, are you going to cover cat’s show? you HAVE to! and what happened to gene’s goodbye column? does pulling it back denote his staying, i hope?

ARGHHHH some ignoramuses really get on my nerves. Asian food is complex–after all, Asian is a CONTINENT, not a country. Even when people say, “she only cooks Indian food”, there’s so much regional variation in technique and ingredients.

How come the other chefs can get away with mostly making Italian food (which is not as complex as Asian food) or specializing in seafood?

The only reason people would propagate such a lie about Asian cuisine is because they’re not especially good at making any one cuisine themselves.

This was the only Top Chef finale I didn’t bother to catch. Hope the show returns to its glory days, but doubt it will. Certain flaws have been building for several seasons. Such as Quick Fires that resemble beat-the-clock game shows (complete with wacky hosts) rather than tests of impromptu cooking skills, and the gross degree of product placement. And Tom, Padma, and Gail seem like they’re calling it in…

I agree that this season of Top Chef was rather lack luster. Tyler Stone being apart of the cast of chefs would definitely added some fireworks. there was too much backstabbing and other childish tactics this season.

Hurray for Paul. Poise, dignity, excellent skills, humility…throughout the competition. Sarah: cheating, manipulating, bullying. Sarah was in the finale because she won a quick fire and a free pass. She should have been bumped when she didn’t help her team mates in Texas. If she had heatstroke, fine. But don’t stand up there and take credit for something you had little part in. Then your boyfriend covertly told you there were bones in your fish before the judges were served. That is outright cheating. While it would have been perfectly fine for you or your sous to find them and correct the mistake, by whispering your errors to you, you both knew what you were doing was not on the up and up. And now…in an interview, you said, “I’ve feel like I’ve won too.” Please spare me the metaphors. Don’t steal Paul’s thunder. Please just go on home…to Chicago. If Texas were truly your home (as it is mine), you wouldn’t be living in Chicago.

Both here and on the Bravo blogs, I don’t understand the whole poor Beverly thing. Sometimes there are toxic co-workers who are nice, but cause problems for everyone. Yes, it’s a competition but her actions were poor sportsmanship, not social ineptitude.

Man i am really late on this one, thank goodness for DVR! Its been a pretty lack luster season, but the right person won. Congrats Paul! It was soooo touching seeing his dad cry at dinner. There is no feeling better than watching your children do something productive with their life. Glad Sarah didn’t win, she got sooo much praise for that dessert, and mean old pastry chef Heather is the one that made it, so good pick Bravo producers! I hope Ed wins the fan favorite this year, he def cooked his but off this season and actually seemed like a nice person. On another note, does anyone else find that Grayson is hilarious, she says these one liners that have me crackin up! Anyway hopefully next season has some better talent!
