Billy Allin (left), the chef and owner of Cakes & Ale in Decatur has just confirmed that his head baker/pastry chef Cynthia Wong has accepted a job at Empire State South and will be be leaving the restaurant within the month.
This turn of events puts a bit of a crimp in Allin’s plans to move Cakes & Ale in mid-July to a much larger space on Decatur Square and open an all-day bakery/cafe.
“We’ve hired a couple of great people for the bakery, so we’re confident we can open as planned,” Allin said. “So we have a very experienced team in plance that needs a leader.”
Allin is conducting a national search to find an executive pastry chef to oversee the bakery and create signature desserts for the adjacent restaurant.
