Louisiana Postcard No. 2

The meat case at T-Jim’s in Cottonport, Louisiana. We ordered some amazing hog’s head cheese — spicy, spreadable, finely ground — and fantastic boudin to go.

Get a large cooler, some dry ice and tell me where you will be. I will meet you there. Secretly….

Mais oui … T-Jim’s also makes the best fresh sausage – with the greens! And pantoilettes (sic??) … ask my brother, the chef about the spelling! I should know, but it escapes me now. Hope my friends showed you a good time in the Parish, John!

I wish I could sink my teeth into that hog’s head cheese.

The parish is Avoyelles in the center of the state. We also like to roast a young suckling pig over an open fire. You can get the pig from T-Jim’s also.
