Mais oui … T-Jim’s also makes the best fresh sausage – with the greens! And pantoilettes (sic??) … ask my brother, the chef about the spelling! I should know, but it escapes me now. Hope my friends showed you a good time in the Parish, John!

The parish is Avoyelles in the center of the state. We also like to roast a young suckling pig over an open fire. You can get the pig from T-Jim’s also.
