The AJC dining team’s specialist in Southern and Neighborhood Fare Jenny Turknett says, “Order the guacamole at Rosa Mexicano and a cart loaded with ripe avocados will materialize at your table. The guacamole, prepared in a molcajete, is prepared tableside and served with two salsas, thin chips and warm corn tortillas. The chunky version here contains a generous helping of cilantro and is well salted. While a $14 price tag may sound steep, the portion is large enough to serve as an entree. Roll it up in the corn tortillas and you have a meal of guacamole tacos.”

The Windy Hill Pappasito’s table-side guacamole is perfect – 2 fresh avocados, chopped onion, tomatoes, cilantro, serranos, touch of lime and salt. Some places give a puree that is really more a Mexican avocado sauce than guacamole. it is cheaper to make the puree form than to make fresh-mashed guacamole.

You pay handsomely for it, but Rosa Mexicano at Atlantic Station makes a wonderful guacamole. Skip the rest of menu and just enjoy margaritas and guacamole. The tableside presentation is a bit gimmicky (as is all of Atlantic Station), but the taste is worth it.

Hands down! Make it yourself, Justin Wilson’s “Mos’ nearly guacamole”. Add the perfect magarita (the recipe is on-line), good chips, a good movie and your significant other and stay at home. Priceless!!

Tableside Guac at Pappasito’s is one of the best.
A recent fad is to serve the ingredients in big chunks (like the pic above). IMO it’s better to mix it coarsely (with a big fork).

Boudros… It’s not located in Atlanta, but in San Antonio on the Riverwalk. Here is theie recipe for Boudro’s Famous Guacamole
Ingredients
•Juice of 1/4 of an orange
•Juice of 1/2 a lime
•1 avocado seeded and scooped out of skin
•2 tablespoons roasted and charred Roma tomatoes diced
•1 Serrano pepper roasted seeded and diced
•1 tablespoon medium dice red onions
•1 teaspoon chopped cilantro
•coarse ground salt to taste (sea salt is better)
Directions
Squeeze juices into bowl. Add avocado and coarsely chop. Add onions, roasted tomato, serrano and cilantro fold into avocado mixture. Add salt (more is better). Result should be crudely chopped not mashed. That’s it.
