In my family, there was no place for sugar in the cornbread. Ours was a buttermilk round with crisp edges cooked in a cast-iron skillet afloat with butter. Greenwood’s on Green Street serves its cornbread made in muffin tins, but don’t be fooled. These aren’t sweet cornbread muffins. The cornbread here is the real deal, so buttery and moist, leaving traces of grease on your fingers. I daresay these might even be a smidge better than my own grandmother’s cornbread.”

Cornbread should not be sweet, or taste like pound cake. It shouldn’t have corn kernels in it. It should be a bit salty and a bit greasy. It is probably better with yellow meal, but white is acceptable. Must be well browned and crispy on outside, soft and tender on the inside. If any, no more than a TBSP or so of sugar.
Give me Colonnade’s little baby muffins or Cracker Barrel’s big ones any time!

Harold’s no longer has cracklin in their cornbread just one more step towards the end. But even without cracklin their cornbread is very good. Cornbread should be crisp on the outside soft on the inside, no sugar, a little vegetable oil made with buttermilk and no egg.

Excuse me? You young folks need someone to cook a good meal for you. A “southern” meal that is! Cornbread is made with coarse meal, preferably yellow and self-rising, with buttermilk, definitely an egg, and to be cooked in a deep black iron skillet until well browned on the bottom and around the edges. Bacon drippings for the batter and for oiling the skillet are best, but in limited quantity. Muffins? Same batter, different baking pan with less cooking time. Several of the restaurants mentioned do offer a reasonably good substitute; however, when we want the real thing…there is no place like home.

Vince, great comment about collards. The best I’ve ever had, believe it or not, were at Charlie Brown Field cafeteria, which is now closed. I was last there about five or six years ago. They had an outstanding lunch presentation at that time, including the best collards I have ever had. A very hard working gentleman ran the show there. I trust he is now doing well at a restaurant venture elsewhere.

I too agree with Linda Lee! My mom made terrific cornbread…bacon drippings and a cast iron pan were important to making a well-browned crust. And absolutely no sugar! Haven’t found cornbread like this at any restaurant I can think of.
