In my family, there was no place for sugar in the cornbread. Ours was a buttermilk round with crisp edges cooked in a cast-iron skillet afloat with butter. Greenwood’s on Green Street serves its cornbread made in muffin tins, but don’t be fooled. These aren’t sweet cornbread muffins. Bar-b-q kitchen on Virginia Avenue has good cornbread. Real and I do mean real cornbread do not have SUGAR in it. I had this same disagreement with a 24 yr old at work I am 40 plus but anyway he says that Jiffy Mix is real cornbread I said WHAT are you CRAZY I asked him is that what your wife cooks he says yes I laughed I said baby that is not cornbread what you are eating is cake I grew up with cornbread being made in the cast iron skillet and that’s how I continue to make it for my family. This reminds me of real mac and cheese. Southern mac and cheese do not have bacon,onions, shrimp etc. I know this will start a debate but I hate when people put all sorts of added ingrediants in mac and cheese and try to call it southern mac and cheese

Don’t make thick corm bread in the south. Thick corn bread is known as Okkahoma wedding cake. The best corn bread is made with 11/4 cup Martha White corn( white) meal mix,1 large egg, 1/4 cup lard or crisco melted and heated to 476. Pur corn meal in metal bowl crack egg and put in weel of corn meal. Heat crisco when crissco is to temp ad about 1 cup of butter milk WHOLE BUTTER MILK not fat free) to consistancy of a cake batter. Then imediatly add hot gtrase and wisk till dissapears. Pour batter back int hot 10 inch cast Iron fring pan. Put in oven for 12-15 minutes. Done when leave side and tooth pick comes out clean, corn bread should be golden brown on top.. When take out of oven let cool for just a few minutes, have plat ready. Put plat over frying pan and turn upside down then Take another plate and put on top of corn bead and tun over to right corn bread. NOTE at about 10 monutes cooking time check corn btead browing if need turn pan around to brown even.

Engineered cornbread for maximum crustibility and flexibility in servings:
1. Buy a 8 triangular wedge preseasoned Lodge cast iron pan at Cracker Barrel.
2. Buy a package of White Lily or Martha White or Aunt Jemima buttermilk cornbread mix, and some buttermilk.
3. Turn oven onto temperature recommended on the cornbread mix package and place the pan in oven.
4. While the oven and pan heat, mix 1/2 the recipe recommended on the cornbread mix package without the egg and without any sugar. Use buttermilk instead of sweetmilk. Use either canola oil or bacon grease.
5. When the oven and pan have reached the recommended temperature, spray the pan with canola spray or grease with bacon grease, and put nearly equal amounts of mix in each wedge.
6. (Optional) Add jalapeno, cheese, onion, cracklins, okra, in any combination desired to each wedge. If some folks don’t want additives leave them out of their wedge(s). Under absolutely no circumstances add sugar to any wedge!
7. Put pan in oven and cook for the recommended time on the cornbread mix package. Cook a little longer if you like super crusty cornbread or shorter if you prefer it runny.
