In my family, there was no place for sugar in the cornbread. Ours was a buttermilk round with crisp edges cooked in a cast-iron skillet afloat with butter. Greenwood’s on Green Street serves its cornbread made in muffin tins, but don’t be fooled. These aren’t sweet cornbread muffins. The cornbread here is the real deal, so buttery and moist, leaving traces of grease on your fingers. I daresay these might even be a smidge better than my own grandmother’s cornbread.”

Henry’s Louisiana Grill in downtown Acworth. Sweet, soft, with a just the right amount of Jalapeno to give it a mild boost. Not traditional Southern style like Momma’s but worth the trip!

2 cups of corn meal, one beaten egg, less than a 1/4 cup of oil added to the mixture, 1- 1/4 cup of buttermilk, thoroughly mix, pour into a hot greased pan, bake between 15-20 minutes at 425 degrees. Don’t, I repeat don’t, slather butter on cornbread, don’t eat it with a fork, and if you entertain the thought of eating collards accompanied by dinner rolls instead of cornbread, you should be run out of the south for being gross and vile.

No one, absolutely no one, has any good cracklin cornbread anymore. Even those who sell so called cracklin cornbread are hard pressed to prove it. It’s like playing the lottery. Odds are you won’t find one piece of cracklin in your serving and the “other guy” on the other side of the place is shouting ’cause he found one little piece of cracklin.

Okay it you want a twinkee order a twinkee, if you want cornbread order cornbread. As far as Cracker Barrel are you kidding me? That crap is made from a bag mix that has 1/2 a cup of oil per piece. I get my “fresh” ground corn meal, from the mill in Helen Ga. Cooked in a well seasoned black iron pan that is pre-heated in the oven with bacon drippings. True southern cornbread, no sugar, no butter, just flat out good. To be honest havent found a restaurant that makes it better.

MUM…………my wife’s. She put that cast iron frying pan in the oven for about 15 minutes with a little oil in it…. Then takes it out and pours that white lily buttermilk self rising batter in it and the bottom sizzles in that hot oil and gives it a nice crust and then cooks it until done. I can eat the whole thing…. and look like it….LOL

I’m in agreement with Linda Lee and Old Negro Spiritualsit..Except, I do (sometimes) put butter on my cornbread..Growing up, my Mom would fry cabbage and make cornbread and that would be my meal..Yummy..Sometimes I do add onions and jalapeno peppers to mine, BUT, I never, ever put sugar in mine..

I agree. NO sugar. Not in cornbread or grits. Bleck! My mamma makes the best, albeit my husband says mine is better. I don’t like it cakey – I want it crispy and crusty! As far as restaurants go, Cracker Barrel’s is tolerable and will serve in a pinch.

I thought about this some more, and I must that Junior’s Grill at Georgia Tech had some of the most consistently enjoyable cornbread I ever had. Yellow cornbread, with a moist almost spongy texture. Definitely not dry and crumbly. A hint of sweetness, but barely noticeable.
Of course, they won’t get a nomination and, no, I don’t see Junior’s ever coming back. But I just thought I’d throw that out there.

As for collards – my favorite is with peanut butter. Both both peanuts and collards come from W. Africa and the combo is delicous.

My cornberad is the best. NO Sugar, Buttermilk, Crisco, White Lilly White Self-rising Corn Meal/ Yellow is OK and a very well greased Iron Skillet, cook on 400o for great crust and tender inside.

Southern Pit BBQ in Griffin still has great cracklin’ cornbread, and darn good barbeque to boot. Of course, nobody can beat Mama’s cornbread, which was made with usually yellow cornmeal, eggs, buttermilk, a bit of bacon grease (or oil in a pinch), a pinch of sugar, and a dab of mayonnaise. Mmmm… hush yo’ mouth!

I’ve been told mine is the best. I make it like my Mother taught me. Heat iron skillet in oven with bacon grease to get really hot. Mix corn meal (I use White Lilly), an egg and milk, pull out the skillet pour a little of the grease into the mixture, sprinkle the skillet with a little corn meal so it won’t stick and bake until golden brown. Always comes out the same! Sometimes when we have chilli I might add a little chedar cheese to it. But NEVER sugar! Yuck!

If there’s any cornbread better than that made by my wife you’ll have to prove it. She learned from her mom and believe me when I say: ” The absolute best in th world.” I’ve asked her to enter the cornbread cook-off in S Pittsburg, TN but they require the use of unseasoned, new Lodge cookware and the result is not the same as when baked in her ancient Griswold or Wagner well seasoned cast iron. Friends and family will attest to my claim.

Odd discussion to have in the summer. South Central Kitchen has the best in my book. They have the men with the design (and women now too) and you can have them dressed to your specification for children’s parties. They also build an elaborate house each year and sell miniature houses that look exactly like it. They only do it at Christmas though. Well one time they had a hansel and gretal one at Halloween.
